Chef Richard Miller Heads to Five Loaves

After five and a half years as Chef de Cuisine, Chef Richard Miller has announced he’s moving on. Miller told me today that he’s accepted the Executive Chef position at Five Loaves Catering.

You know I’m a bit sad about this as I’m a big fan of Miller’s and enjoy having him accessible at Graze, which is located in the Marriott in downtown Winston-Salem. Miller was recently the featured chef at our last Chef’s Table. Miller says, “It’s pretty exciting I’m a little nervous but ready to get in there and get going. Five Loaves has established a great reputation and standard and I’m glad to be a part of that.” Miller says he intends to continue to have a presence in the local food community. “I plan to kick it up a notch there and add even more of that local flair that I’m passionate about as well as wine dinners and more collaboration among chefs.”

Miller’s last day at Graze is Wednesday and his new gig at Five Loaves starts on Friday. And since there’s no rest for the wicked or weary, Miller is doing a collaboration dinner with his former sous chef, Tim Gallione at Diamondback Grill on Thursday. What will be different though…his first Thanksgiving off in years and that, even though he’s not sure what to do with himself, he says he’s looking forward to it.

Graze is currently seeking a new Chef de Cuisine to replace Miller.

Now about my okra nachos and my Sweet Potato & Pumpkin Tart….
